Benefuuki (べにふうき) is actually a tea variety, the oldest black tea variety in Japan, and it is usually used to make black tea. Benefuuki tea has more "methylated catechins" than normal teas. It has abundant anti-allergic and anti-inflammatory effects which can help relieve allergy and inflammation. However, when it is made into black tea undergoign full fermentation, the content of methylated catechins is greatly reduced. Thus tea farmers thought of making this kind of tea into green tea which is non-fermented: preserving large amount of methylated catechins and hence increase the antioxidants that help anit-age.
